A REVIEW: PECTIN AS FOOD PACKAGING

According to Flutto (2003), the word ‘pectin’ originated from the Greek word ‘pektos’ which means firm and hard where its reflecting pectin’s ability in forming gels. Meanwhile, the term ‘pectin’ covers many polymers that vary in its molecular weight, chemical configuration, and neutral sugars content.

There is growing interest among the researchers in developing pectin as biodegradable food packaging. This review attempts to summarise the studies on the application of pectin as edible coatings or films for food packaging.
